KÔSTA Latin Izakaya in Santa Ana, Panama City

The Curry That Almost Made Us Order Twice

After three visits, Kôsta had already become one of those places we could recommend with confidence. Its take on Japanese street food felt fresh and playful, while the service, mixology and kitchen execution remained consistently strong every time we returned.

Start with the gyozas and choose a pork or chicken katsu sando, then make room for the two dishes that stayed with us most: the Fresh Fish, Lulo, and Green Mango Ceviche and the Japanese Curry with beef. The lulo gives the ceviche a bright balance of citrus, sweetness and acidity. The curry is the dish that had every taste bud awake and almost convinced us to order a second round. That good.

WHAT TO ORDER

What to Order at Kôsta

Fresh Fish, Lulo and Green Mango Ceviche

The current menu pairs fresh fish with lulo, green mango, cilantro oil and crispy sweet-potato shoestrings. In our experience, the lulo gave the ceviche a bright balance of citrus, sweetness and acidity, making it one of the dishes we remembered most clearly.

Japanese Curry with Beef

Made with coconut milk, carrot and potato, and served with coconut jasmine rice, this was the dish that had every taste bud awake. It nearly convinced us to order a second round—the strongest reaction in our original Kôsta review.

Pork or Chicken Katsu Sando

Both versions appear on Kôsta’s current menu. Choose pork or chicken; either one carries forward the sandwich we remembered as phenomenal, with the crisp, comforting character that makes a sando easy to share—or keep.

Short Rib or Crab Gyozas

Kôsta’s current menu offers short-rib and crab fillings. The gyozas were among the first plates to catch our attention, so they remain a natural starting point before moving into the ceviche, curry and sandos.

THE LOCAL VERDICT

Why Kôsta Stays on Our List

Kôsta is our pick for diners who want Japanese technique interpreted through tropical ingredients without losing the clarity of either influence. Across three visits, the service, mixology and kitchen execution remained consistently strong. Come for the ceviche and curry, stay curious about the sandos and gyozas, and remember that the menu may continue to evolve.
